• Prepare a fresh six pound beef brisket by hand rubbing both sides with a spice blend of 6 minced garlics, salt, pepper and 3 tablespoons of liquid smoke. Arrange 2 sliced onions on top, and let marinade for 24 hours if possible.
• In a large camp cooking brisket dutch oven, combine ˝ cup of barbecue sauce, ˝ cup of brown sugar, ˝ cup of beer, Ľ cup of Worcestershire sauce and 2 tablespoons of liquid smoke. Let simmer until the sugar is dissolved.
• Place the brisket in a dutch oven and cover with the sauce.
• Slow cook the brisket in the dutch oven over 6 to 8 hot coals and put 8 to 10 hot coals on top of the lid. The dish should be ready to eat in about 5 hours.
